1 cup of Unsalted Butter (cold, cut into cubes)
1/4 cup of Sugar (plus extra for sprinkling)
1/2 teaspoon of Salt
1/4 cup of Ice Water
3 medium Apples (peeled, cored, and diced)
1 teaspoon of Cinnamon
1 tablespoon of Lemon Juice
Instructions
In a large mixing bowl, combine the flour, sugar, and salt. Add the cubed butter, and using your fingertips or a pastry cutter, mix until the mixture resembles coarse crumbs.
Slowly add the ice water to the mixture, one tablespoon at a time, until the dough begins to come together. Shape it into a disk, wrap in plastic, and refrigerate for at least 15 minutes.
While the dough chills, in a mixing bowl, combine diced apples, sugar, cinnamon, and lemon juice.
Roll out the chilled dough to about 1/8 inch thick. Cut out circles using a 5-inch round cutter.
Place a spoonful of the apple filling on one half of each circle. Fold the other half over the filling and seal the edges.
Preheat your oven to 375°F (190°C). Arrange the hand pies on a lined baking sheet. Bake for 25-30 minutes or until golden brown.
Allow the pies to cool for a few minutes before serving.
