6 slices of Bacon
1 lb (trimmed and cubed) of Brisket
1 large Onion, diced
4 cloves of Garlic, minced
2 (1 red, 1 green) Bell peppers, diced
1 can (28 oz) of Canned diced tomatoes
1 can (15 oz), drained and rinsed of Kidney beans
2 tbsp of Chili powder
1 tbsp of Cumin
2 cups of Beef broth
Salt to taste
Black pepper to taste
2 tbsp of Olive oil
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the pot.
In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
Add the cubed brisket to the pot, ensuring to brown the pieces on all sides for about 8-10 minutes.
Stir in the diced bell peppers and cook for another 5 minutes.
Sprinkle in the chili powder, cumin, salt, and pepper. Stir well to coat, allowing the spices to toast briefly.
Pour in the canned diced tomatoes and beef broth. Bring to a simmer, reduce heat to low, and cover. Simmer for 60 minutes, stirring occasionally.
Stir in the kidney beans and reserved crispy bacon. Simmer together for another 10 minutes.
Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
