  • 6 slices of Bacon
  • 1 lb (trimmed and cubed) of Brisket
  • 1 large Onion, diced
  • 4 cloves of Garlic, minced
  • 2 (1 red, 1 green) Bell peppers, diced
  • 1 can (28 oz) of Canned diced tomatoes
  • 1 can (15 oz), drained and rinsed of Kidney beans
  • 2 tbsp of Chili powder
  • 1 tbsp of Cumin
  • 2 cups of Beef broth
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp of Olive oil

  • Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the pot.
  • In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the cubed brisket to the pot, ensuring to brown the pieces on all sides for about 8-10 minutes.
  • Stir in the diced bell peppers and cook for another 5 minutes.
  • Sprinkle in the chili powder, cumin, salt, and pepper. Stir well to coat, allowing the spices to toast briefly.
  • Pour in the canned diced tomatoes and beef broth. Bring to a simmer, reduce heat to low, and cover. Simmer for 60 minutes, stirring occasionally.
  • Stir in the kidney beans and reserved crispy bacon. Simmer together for another 10 minutes.
  • Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
