  • 16 oz of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 3 large eggs
  • 1/2 cup of sour cream
  • 2 ripe bananas, sliced
  • 1 cup of whipped cream
  • 1/2 cup of additional vanilla wafer crumbs

  • Instructions

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, mix the vanilla wafer crumbs, melted butter, and sugar until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form your crust.
  • Bake the crust in the oven for 10 minutes. Allow it to cool on a wire rack.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually blend in the sugar and vanilla extract.
  • Beat in the eggs one at a time, mixing just until combined.
  • Gently fold in the sour cream until it’s fully blended into the mixture.
  • Layer the sliced bananas evenly over the cooled crust.
  • Spread the cheesecake filling over the banana layer, smoothing the top with a spatula.
  • Bake the cheesecake for about 55–60 minutes, or until the edges are set but the center has a slight jiggle.
  • Cool the cheesecake in the pan at room temperature for about 30 minutes before transferring to the refrigerator to chill for at least 4 hours or overnight.
