2 cups of vanilla wafer crumbs
1/2 cup of unsalted butter, melted
1 tablespoon of sugar
16 oz of cream cheese, softened
1 cup of granulated sugar
1 teaspoon of vanilla extract
3 large eggs
1/2 cup of sour cream
2 ripe bananas, sliced
1 cup of whipped cream
1/2 cup of additional vanilla wafer crumbs
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, mix the vanilla wafer crumbs, melted butter, and sugar until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form your crust.
Bake the crust in the oven for 10 minutes. Allow it to cool on a wire rack.
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually blend in the sugar and vanilla extract.
Beat in the eggs one at a time, mixing just until combined.
Gently fold in the sour cream until it’s fully blended into the mixture.
Layer the sliced bananas evenly over the cooled crust.
Spread the cheesecake filling over the banana layer, smoothing the top with a spatula.
Bake the cheesecake for about 55–60 minutes, or until the edges are set but the center has a slight jiggle.
Cool the cheesecake in the pan at room temperature for about 30 minutes before transferring to the refrigerator to chill for at least 4 hours or overnight.
