1 loaf of French bread (about 1 pound), cut into 1-inch cubes
4 ripe bananas, sliced
6 large eggs
2 cups whole milk
1 cup heavy cream
1 cup brown sugar, packed
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon nutmeg (optional, but highly recommended)
¼ cup butter, melted
¼ cup dark rum (or substitute with maple syrup for non-alcoholic version)

Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg (if using), melted butter, and salt until well combined.
Place the cubed French bread into a greased 9×13 inch baking dish. Gently fold in the sliced bananas.
Pour the egg mixture evenly over the bread and bananas.
Cover the dish tightly with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.
When you're ready to bake, remove the casserole from the fridge and let it come to room temperature for about 20 minutes.
