1 loaf of thick-cut bread (challah, brioche, or French bread)
2 cups mixed berries (fresh or frozen; blueberries, strawberries, raspberries)
6 large eggs
2 cups whole milk (or almond milk for a dairy-free twist)
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon (optional)
1/4 teaspoon salt
Butter or non-stick cooking spray (for greasing the pan)
Maple syrup (for serving)
Instructions
Preheat your oven to 350°F (175°C).
Slice your loaf into cubes, about 1 to 2 inches.
Grease a 9×13-inch baking dish with butter or non-stick spray.
Spread half of the bread cubes in the dish, then sprinkle half of the mixed berries over it. Repeat with the remaining bread and berries.
In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth.
Pour the egg mixture evenly over the layered bread and berries.
Let it soak for at least 30 minutes or overnight in the fridge.
Bake in the preheated oven for 45-50 minutes until the top is golden.
