Ingredients
Scale
2 cups of crushed Biscoff cookies
1/2 cup of melted butter
16 oz of softened cream cheese
3/4 cup of sugar
1 cup of sour cream
1 teaspoon of vanilla extract
2 large eggs
1/2 cup of Biscoff spread
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed Biscoff cookies and melted butter until it resembles wet sand. Firmly press this mixture into the bottom of a 9-inch springform pan.
Using a hand mixer, beat the softened cream cheese and sugar until smooth and creamy. Add in the sour cream, vanilla extract, and Biscoff spread, continuing to mix until well incorporated.
Add the eggs one at a time to your mixture, beating well after each addition.
Pour the cheesecake batter over the crust in the springform pan. Bake in the preheated oven for about 55 minutes or until the edges are set and the center has a slight jiggle.
Allow the cheesecake to cool at room temperature for one hour before transferring it to the refrigerator. Chill for at least 4 hours or overnight to set properly.
Warm some Biscoff spread and drizzle it over the chilled cheesecake just before slicing. Add a sprinkle of crushed Biscoff cookies for added texture.
