1 cup orzo pasta
2 cups cooked chicken, shredded
1 cup Boursin cheese
1 cup broccoli florets
1 cup cherry tomatoes, halved
1 cup spinach, roughly chopped
1/2 cup chicken broth

Salt and pepper to taste
Olive oil for drizzling

Instructions
Preheat your oven to 375°F (190°C).
In a pot of salted boiling water, cook the orzo according to package directions until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, heat a drizzle of olive oil over medium heat. Toss in the broccoli and sauté for about 3-4 minutes until vibrant and slightly tender. Add the chopped spinach and cherry tomatoes, cooking for another 2 minutes. Season with salt, pepper, and garlic powder.
In a large mixing bowl, combine the cooked orzo, sautéed veggies, shredded chicken, and Boursin cheese.
Pour in the chicken broth and mix until well combined. Adjust seasoning as needed.
