  • 4 slices of bacon, diced
  • 1 cup breakfast sausage, crumbled
  • 4 large eggs
  • 1 cup shredded cheese, cheddar or your favorite blend

  • Salt and pepper, to taste
  • Fresh herbs, like chives or parsley, for garnish

  • Instructions

  • In a large skillet over medium heat, add the diced bacon and cook until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate and leave some grease in the skillet.
  • In the same skillet, add the crumbled breakfast sausage and cook until browned, about 5-6 minutes. If using bell peppers, add them halfway through the cooking time.
  • In a bowl, whisk together the eggs, a pinch of salt, and a dash of pepper. Reduce heat to low in the skillet, pour in the eggs, and scramble gently until just set, about 2-3 minutes.
  • Add the shredded cheese to the skillet and mix until melted and gooey. Remove from heat.
  • Lay each flatbread on a baking sheet and divide the egg and sausage mixture evenly. Top with crispy bacon.
  • Preheat the broiler and place the baking sheet under it for 1-2 minutes, just until the cheese melts and bubbles.
