1 large butternut squash (about 3–4 lbs), peeled, seeded, and cubed
1 medium onion, chopped
3 cloves garlic, minced
4 cups vegetable broth
1 can (13.5 oz) coconut milk
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
½ teaspoon cinnamon
1 teaspoon ginger, grated
Instructions
Prepare the ingredients by peeling, seeding, and cubing the butternut squash. Chop the onion and mince the garlic.
In a large pot, heat the olive oil over medium heat, add the chopped onion, and sauté for 5 minutes until translucent. Add garlic and ginger, cooking for an additional 1-2 minutes.
Add the cubed butternut squash to the pot, stirring well to coat and cooking for about 8 minutes until starting to soften.
Pour in the vegetable broth and coconut milk, stirring to combine. Bring to a gentle boil, then reduce heat to a simmer for about 20 minutes.
