  • 1 cup of packed brown sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1/2 cup of butterscotch chips

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • In a larger bowl, combine the melted butter and brown sugar, stirring until smooth.
  • Add the egg and vanilla to the butter mixture and mix until combined.
  • Gradually stir in the flour mixture until just combined.
  • Gently fold in the grated zucchini and butterscotch chips.
  • Spread the batter evenly into your prepared pan and sprinkle extra butterscotch chips on top if desired.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
