1 cup of grated zucchini
1 cup of all-purpose flour
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1 teaspoon of ground cinnamon
1/2 cup of unsalted butter, melted
1 cup of packed brown sugar
1 large egg
1 teaspoon of vanilla extract
1/2 cup of butterscotch chips
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
In a larger bowl, combine the melted butter and brown sugar, stirring until smooth.
Add the egg and vanilla to the butter mixture and mix until combined.
Gradually stir in the flour mixture until just combined.
Gently fold in the grated zucchini and butterscotch chips.
Spread the batter evenly into your prepared pan and sprinkle extra butterscotch chips on top if desired.
