  • 1/4 cup of fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  • Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until tender. Add the minced garlic and stir for about 30 seconds until fragrant.
  • Add the Veggies: Toss in the diced bell pepper and cook for an additional 3-4 minutes until softened.
  • Spice it Up: Sprinkle in the Cajun seasoning and smoked paprika. Stir well for about 1 minute.
  • Create the Sauce: Lower the heat and slowly pour in the heavy cream, stirring constantly until smooth. Allow it to simmer for a few minutes.
