  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups vegetable broth or water
  • 1 lb smoked sausage, sliced
  • Salt & pepper to taste
  • 4 cups cooked white rice
  • Chopped green onions and parsley for garnish

  • Instructions

  • Rinse your dried beans thoroughly under cold water, picking out any debris. If you're using canned beans, rinse and drain them.
  • In a large pot, add your rinsed beans along with the vegetable broth and bring to a gentle boil; reduce the heat and simmer for about 30 minutes.
  • Heat a splash of oil in a frying pan over medium heat. Add the chopped onion, celery, bell pepper, and garlic. Sauté for about 5-7 minutes until the veggies are soft.
  • Stir in the Cajun seasoning, thyme, and bay leaf.
  • Once the beans have simmered for 30 minutes, add the sautéed veggies and sliced sausage to the pot. Stir and simmer for another 20-30 minutes until the beans are tender. Add salt and pepper to taste.
  • Cook your rice according to package instructions.
  • Remove the bay leaf and serve the red beans over rice, garnished with green onions and parsley.
