1 lb dried red kidney beans
1 medium onion, chopped
2 celery stalks, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
1 teaspoon Cajun seasoning
1 teaspoon dried thyme
1 bay leaf
6 cups vegetable broth or water
1 lb smoked sausage, sliced
Salt & pepper to taste
4 cups cooked white rice
Chopped green onions and parsley for garnish
Instructions
Rinse your dried beans thoroughly under cold water, picking out any debris. If you're using canned beans, rinse and drain them.
In a large pot, add your rinsed beans along with the vegetable broth and bring to a gentle boil; reduce the heat and simmer for about 30 minutes.
Heat a splash of oil in a frying pan over medium heat. Add the chopped onion, celery, bell pepper, and garlic. Sauté for about 5-7 minutes until the veggies are soft.
Stir in the Cajun seasoning, thyme, and bay leaf.
Once the beans have simmered for 30 minutes, add the sautéed veggies and sliced sausage to the pot. Stir and simmer for another 20-30 minutes until the beans are tender. Add salt and pepper to taste.
Cook your rice according to package instructions.
Remove the bay leaf and serve the red beans over rice, garnished with green onions and parsley.
