  • 1 pound large shrimp, peeled and deveined
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 slices of thick-cut bread
  • 4 ounces sharp cheddar cheese, grated
  • 4 ounces pepper jack cheese, grated
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Fresh parsley, chopped

  • Instructions

  • In a bowl, combine the shrimp with Cajun seasoning and minced garlic.
  • In a large skillet over medium-high heat, add olive oil. Toss in the seasoned shrimp. Cook for about 2-3 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  • Butter one side of each slice of bread. Place the bread, buttered side down, in the skillet. Layer half of the cheese on one slice, add the shrimp, and top with the remaining cheese before placing another slice of bread on top, buttered side up.
  • Cook over medium heat for about 3-4 minutes until golden brown. Flip and grill the other side for another 3-4 minutes until the cheese has melted and the bread is crispy.
  • Remove from the skillet, let sit for a minute before slicing. Garnish with fresh parsley and serve hot.
