  • ½ cup of granulated sugar
  • ½ cup of unsalted butter, melted
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • ¼ teaspoon of salt
  • 15 oz of ricotta cheese, drained well
  • 1 cup of powdered sugar, sifted
  • 1 teaspoon of vanilla extract
  • ½ cup of mini chocolate chips
  • ¼ cup of finely chopped pistachios, optional for garnish
  • Powdered sugar for dusting
  • Additional chocolate chips or pistachios, if desired

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, mix melted butter, egg, and vanilla extract. Combine both mixtures and stir until a dough forms.
  • Grease a 9×9 inch baking pan and press the dough evenly into the bottom. Bake in the preheated oven for about 15-20 minutes or until golden brown. Let it cool completely in the pan.
  • In a mixing bowl, combine the drained ricotta, powdered sugar, and vanilla extract. Beat until smooth and creamy. Gently fold in the mini chocolate chips.
  • Once the crust is cool, spread the ricotta filling evenly over the top.
  • Cover the pan with plastic wrap and refrigerate for at least 2 hours.
  • Once the bars have chilled, cut them into squares and dust with powdered sugar. Top with additional chocolate chips or chopped pistachios if desired.
