1 ½ cups of all-purpose flour
½ cup of granulated sugar
½ cup of unsalted butter, melted
1 large egg
1 teaspoon of vanilla extract
1 teaspoon of baking powder
¼ teaspoon of salt
15 oz of ricotta cheese, drained well
1 cup of powdered sugar, sifted
1 teaspoon of vanilla extract
½ cup of mini chocolate chips
¼ cup of finely chopped pistachios, optional for garnish
Powdered sugar for dusting
Additional chocolate chips or pistachios, if desired
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, mix melted butter, egg, and vanilla extract. Combine both mixtures and stir until a dough forms.
Grease a 9×9 inch baking pan and press the dough evenly into the bottom. Bake in the preheated oven for about 15-20 minutes or until golden brown. Let it cool completely in the pan.
In a mixing bowl, combine the drained ricotta, powdered sugar, and vanilla extract. Beat until smooth and creamy. Gently fold in the mini chocolate chips.
Once the crust is cool, spread the ricotta filling evenly over the top.
Cover the pan with plastic wrap and refrigerate for at least 2 hours.
Once the bars have chilled, cut them into squares and dust with powdered sugar. Top with additional chocolate chips or chopped pistachios if desired.
