2 leeks, cleaned and sliced (white and light green parts only)
8 ounces of mushrooms, sliced (cremini or button)
2 cloves of garlic, minced
1 teaspoon of thyme (fresh or dried)
1 cup of vegetable broth
1 cup of heavy cream
1 cup of Gruyere cheese, grated (plus extra for topping)
Salt and pepper to taste
Fresh parsley, chopped for garnish (optional)
Instructions
Cook the pasta: Start by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water (about 1/2 cup) for later.
Sauté the leeks: In a large skillet, heat the olive oil or butter over medium heat. Add the sliced leeks and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the leeks are soft and beginning to caramelize until golden brown.
Add the mushrooms: Toss in the sliced mushrooms and continue to sauté for another 5 minutes or until they are nicely browned and tender.
Flavor it up: Stir in the minced garlic and thyme, cooking for another minute until fragrant.
Pasta sauce time: Pour in the vegetable broth, scraping up any tasty bits stuck to the bottom of the pan. Add the heavy cream and let it simmer for 2-3 minutes.
Cheesy goodness: Reduce the heat to low, and stir in the grated Gruyere cheese until melted and creamy.
Combine: Gently fold in the cooked pasta, adding a splash of the reserved pasta water if it looks too dry. Season with salt and pepper to taste.
