Ingredients
Scale
1 cup of Arborio rice
4 slices of Bacon
1 large Onion, thinly sliced
4 cups of Chicken or vegetable broth
1 cup of Parmesan cheese, grated
2 tablespoons of Olive oil
2 cloves of Garlic, minced
1/2 cup of White wine
Salt to taste
Pepper to taste
Instructions
Start by warming the chicken or vegetable broth in a saucepan over low heat.
In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Transfer the bacon to a paper towel-lined plate and retain about 2 tablespoons of bacon fat in the skillet.
Add the sliced onions to the skillet with the reserved bacon fat and sauté over medium-low heat until golden brown and caramelized, about 15-20 minutes.
Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Stir in the Arborio rice, allowing it to toast for about 1-2 minutes.
Pour in the white wine, stirring constantly until fully absorbed.
Gradually add the warm broth to the rice, starting with one ladleful and stirring frequently until absorbed. Repeat this process until the rice is tender and creamy, about 20-25 minutes.
Once cooked, remove from heat and stir in the grated Parmesan cheese and chopped crispy bacon.
Plate immediately, garnishing with extra Parmesan cheese or fresh herbs if desired.
