  • 1 cup of whole milk
  • 1/2 cup of granulated sugar
  • 2 teaspoons of ground cardamom
  • 1 tablespoon of vanilla extract
  • 2 packets (1/4 oz each) of unflavored gelatin
  • 1/4 cup of cold water
  • Pistachios or fresh berries for topping (optional)

  • Instructions

  • In a saucepan over medium heat, combine the heavy cream, whole milk, and sugar. Stir gently until the sugar completely dissolves and the mixture is warm, about 5 minutes.
  • Add in the ground cardamom and vanilla extract. Stir until well combined and fragrant.
  • In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes until it blooms.
  • Once the gelatin is bloomed, gently heat it in the microwave for about 10 seconds until it dissolves. Add this dissolved gelatin into the warm cream mixture, stirring continuously until fully combined.
  • Pour the mixture into your desired serving glasses or molds.
  • Refrigerate for at least 4 hours or until set.
  • Once set, gently run a knife around the edges if you used molds, and invert onto a plate. Garnish with crushed pistachios or fresh berries.
