Ingredients

  • 2 cups of all-purpose flour
  • 2 cups of granulated sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of salt
  • 1 cup of vegetable oil
  • 4 large eggs
  • 3 cups of grated carrots
  • 1 cup of crushed pineapple, drained
  • 1 cup of chopped walnuts or pecans (optional)
  • 8 oz of cream cheese, softened
  • 1/2 cup of unsalted butter, softened
  • 4 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 12 tablespoons of heavy cream

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well mixed.
  • In another bowl, whisk together the oil and eggs until combined. Then add in the grated carrots and crushed pineapple. Stir until well incorporated.
  • Gradually fold the wet ingredients into the dry ingredients. Be careful to not overmix.
  • If using, fold in the walnuts or pecans gently.
  • Divide the batter evenly between your prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
  • In a mixing bowl, beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar and beat until creamy. Add vanilla extract and blend, adjusting consistency with heavy cream as needed.
  • Once cakes are completely cool, layer one on a cake stand and spread frosting on top. Place the second layer on top, crumb-coat the cake with a thin layer of frosting, and chill for 30 minutes.
  • After chilling, cover the entire cake with the remaining frosting. Get creative with decoration!
