  • 1/2 teaspoon ground nutmeg

  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed walnuts or pecans (optional)
  • 1 cup powdered sugar (for the glaze)
  • 23 tablespoons milk (for the glaze)
  • 1 teaspoon vanilla extract (for the glaze)

  • Instructions

  • Preheat your oven to 350°F (175°C) and grease your doughnut pan.
  • In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, beat the eggs, then stir in the vegetable oil and vanilla extract. Add the finely grated carrots and mix until well combined.
  • Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  • If using walnuts or pecans, fold them in gently.
  • Using a piping bag or a spoon, fill each doughnut cavity about 2/3 full.
