1 medium head of cauliflower, chopped
2 cups of cheddar cheese, shredded
1 cup of milk
4 tablespoons of butter
3 cloves of garlic, minced
1 cup of breadcrumbs
Salt and pepper to taste
1 teaspoon of dried herbs (e.g., thyme, oregano)
Instructions
Preheat the oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Add the chopped cauliflower and cook for about 5 minutes until slightly tender. Drain well and set aside.
In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute. Slowly whisk in the milk, cooking until it thickens slightly. Stir in 1.5 cups of shredded cheddar cheese until melted and creamy. Add salt, pepper, and herbs to taste.
In a large mixing bowl, combine the cooked cauliflower and cheese sauce, mixing well to coat all the florets. Transfer this mixture to a greased casserole dish.
Sprinkle the remaining cheese and breadcrumbs evenly over the top.
Place the casserole in the preheated oven and bake for 30 minutes, or until the top is golden and bubbling.
Once baked, allow it to rest for about 5 minutes before serving.
