4–5 tablespoons of cold water
2 cups of peeled and diced potatoes
1 cup of chopped onions

1 teaspoon of salt
1/2 teaspoon of pepper
1 egg for egg wash (optional)
Instructions
In a large bowl, combine the all-purpose flour and salt. Cut the cold butter into small pieces and mix until the mixture resembles coarse crumbs. Gradually add cold water and mix until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
In a skillet over medium heat, sauté the chopped onions until translucent. Add the diced potatoes and season with salt and pepper. Cook until the potatoes are tender and slightly crisp, about 15 minutes. Allow to cool slightly before adding your shredded cheese.
