1 package (about 9 oz) of Cheese Tortellini
4 tablespoons of unsalted Butter
8 oz of button or cremini Mushrooms, sliced
12 Sage leaves
1/2 cup of grated Parmesan cheese
Salt to taste
Black pepper to taste
Instructions
In a large pot, bring salted water to a rapid boil. Add the cheese tortellini and cook according to package directions, usually about 3-5 minutes or until they float to the surface. This indicates they are cooked through and ready to enjoy!
While the tortellini is cooking, heat 2 tablespoons of butter in a large skillet over medium heat. Add the sliced mushrooms. Sauté for about 5-7 minutes, stirring occasionally until they are golden brown and tender. Season with salt and pepper to taste.
In the same skillet as the mushrooms, add the sage leaves. Cook for 2-3 minutes or until crispy, allowing them to infuse their flavor into the butter. Be careful not to burn them – they should be bright green and crisp!
Once the tortellini are cooked, drain them and add them to the skillet with the sautéed mushrooms and crispy sage. Pour in the remaining 2 tablespoons of butter, and toss everything gently until well coated and heated through. Sprinkle the grated Parmesan cheese on top and serve immediately, garnished with extra sage if desired.
