  • 4 large russet potatoes, washed
  • 1 pound ground beef or turkey (or black beans for a veggie option)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, jalapeños, olives, or avocado

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash your potatoes thoroughly, pat them dry, and poke a few holes in each with a fork.
  • Rub the potatoes with olive oil and sprinkle with salt.
  • Place the potatoes in the oven and bake for about 45-50 minutes, or until fork-tender.
  • Brown the ground beef (or turkey) in a skillet over medium heat, breaking it up as it cooks.
  • Drain excess fat if needed and stir in the taco seasoning with a splash of water. Simmer for about 5 minutes.
  • When the potatoes are done, remove them, let cool slightly, and cut each potato in half lengthwise.
  • Scoop out some of the insides to create a canoe-like shape and mix the flesh with the meat, cheese, sour cream, green onions, and salsa.
  • Fill the potato skins with the mixture and top with remaining cheese.
  • Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
