4 large russet potatoes, washed
1 pound ground beef or turkey (or black beans for a veggie option)
1 packet taco seasoning
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup chopped green onions
1/2 cup salsa
Salt and pepper to taste
Optional toppings: diced tomatoes, jalapeños, olives, or avocado
Preheat your oven to 400°F (200°C).
Wash your potatoes thoroughly, pat them dry, and poke a few holes in each with a fork.
Rub the potatoes with olive oil and sprinkle with salt.
Place the potatoes in the oven and bake for about 45-50 minutes, or until fork-tender.
Brown the ground beef (or turkey) in a skillet over medium heat, breaking it up as it cooks.
Drain excess fat if needed and stir in the taco seasoning with a splash of water. Simmer for about 5 minutes.
When the potatoes are done, remove them, let cool slightly, and cut each potato in half lengthwise.
Scoop out some of the insides to create a canoe-like shape and mix the flesh with the meat, cheese, sour cream, green onions, and salsa.
Fill the potato skins with the mixture and top with remaining cheese.
Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
