1 cup (226g) unsalted butter
¾ cup (90g) powdered sugar
2 cups (250g) all-purpose flour
½ teaspoon salt
1 teaspoon vanilla extract
1 cup (170g) dark chocolate chips
½ cup (75g) dried cherries
Instructions
Preheat your oven to 350°F (180°C).
In a large mixing bowl, beat the softened unsalted butter and powdered sugar together with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
With the mixer running, pour in the vanilla extract and mix until just combined.
In another bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the butter-sugar mixture, mixing on low speed or using a spatula until combined.
Gently fold in dark chocolate chips and chopped dried cherries.
Turn the dough onto a lightly floured surface and shape it into a log, about 2 inches in diameter. Wrap tightly in plastic wrap and chill in the fridge for at least 30 minutes.
Remove from fridge and slice the log into ¼-inch thick rounds. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes until edges are lightly golden.
Let cool slightly on the baking sheet before transferring to a wire rack to cool completely.
