2 cups of cooked chicken, shredded or diced
3 cups of fresh broccoli florets
1 cup of cooked rice
1 can (10.5 oz) of cream of chicken soup
1 cup of sour cream or Greek yogurt
1 cup of shredded cheddar cheese
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt to taste
Pepper to taste
1/2 cup of breadcrumbs
Optional: sprinkle of paprika for color
Instructions
Preheat your oven to 350°F (175°C).
If using raw chicken, cook it first by boiling, baking, or sautéing. Blanch the broccoli in boiling water for 2 minutes until bright green, then shock it in cold water.
In a large bowl, combine the cooked chicken, blanched broccoli, cooked rice, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Fold in half of the shredded cheddar cheese into the mixture and reserve the other half for topping.
Grease a 9×13 inch casserole dish and spread the mixture evenly in it, patting it down gently.
Sprinkle the remaining cheddar cheese over the top, followed by the breadcrumbs and paprika if using.
Bake for 30-35 minutes until bubbly and the top is golden brown.
Let the casserole cool for 5-10 minutes before serving.
