Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to the package instructions until al dente. Reserve about ½ cup of the pasta water, then drain and set aside.
Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes until golden brown and cooked through.
Add garlic: Once the chicken is cooked, reduce the heat to medium. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
Make the sauce: Pour in the heavy cream, stirring to combine. Bring to a simmer and then gradually sprinkle in the Parmesan cheese while stirring continuously until the sauce is smooth.
Toss in the pasta: Add the drained fettuccine to the skillet and gently toss to coat with the sauce. Add more pasta water if needed.
Serve it up: Sprinkle with additional Parmesan cheese and the chopped parsley before serving.
