Ingredients
Scale
4 boneless, skinless chicken breasts (about 6 oz each)
1 cup all-purpose flour
2 large eggs
2 cups breadcrumbs (panko works great for extra crunch!)
1/2 cup unsalted butter, softened
3–4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Cooking oil (for frying)
Instructions
Prepare the herb butter: In a bowl, mix the softened butter, minced garlic, parsley, dill, salt, and pepper.
Shape the chicken: Place the chicken breasts between two sheets of plastic wrap and gently pound them to about 1/2 inch thickness.
Fill the chicken: Take a spoonful of the garlic herb butter and place it in the center of each chicken breast. Fold the sides over the butter and roll it up tightly, securing with toothpicks.
Coat the chicken: Dredge each chicken roll in flour, dip it in the egg mixture, and then coat it in breadcrumbs.
Chill: Place the prepared chicken rolls on a baking sheet and refrigerate for at least 30 minutes.
Fry the chicken: In a skillet, heat cooking oil and fry the chicken rolls for about 5-6 minutes on each side until golden brown and cooked through.
Rest and serve: Drain excess oil, remove toothpicks, and serve immediately.
