2 medium-sized eggplants
1/4 cup soy sauce
2 tablespoons rice vinegar
2 teaspoons sugar
2–3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 teaspoon red pepper flakes
1 tablespoon sesame oil
Fresh cilantro, chopped
1–2 green onions, sliced
Sesame seeds (optional)
Cut the eggplants into bite-sized cubes.
Place the cubed eggplants in a colander and sprinkle with salt. Let sit for 15-20 minutes.
Rinse the eggplants under cold water and pat dry.
In a large skillet, heat oil over medium-high heat. Add eggplant cubes and sauté until tender and golden brown, about 7-10 minutes.
In a small bowl, mix together soy sauce, rice vinegar, sugar, minced garlic, minced ginger, red pepper flakes, and sesame oil until sugar dissolves.
In a mixing bowl, combine warm eggplant with dressing and toss to coat.
Top with fresh cilantro, sliced green onions, and sesame seeds.
Serve warm or chill for about 20 minutes before serving.
