1 ¼ cups water
2 tablespoons sugar
1 tablespoon rice vinegar
1 teaspoon vanilla extract
10 fresh strawberries, hulled and sliced
½ cup dark chocolate chips
1 tablespoon coconut oil
Optional toppings: crushed nuts, sprinkles, or shredded coconut
Instructions
Rinse the sushi rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and water. Bring to a gentle boil, reduce heat and simmer for about 20 minutes.
Mix sugar, rice vinegar, and vanilla extract in a small bowl. Pour over cooked rice and fold until well combined. Cool to room temperature.
Slice strawberries evenly.
Place a sushi mat on a clean surface and lay parchment paper on top. Wet your hands and spread rice evenly over the parchment, leaving space at the top.
