  • 10 fresh strawberries, hulled and sliced
  • ½ cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Optional toppings: crushed nuts, sprinkles, or shredded coconut

  • Instructions

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice and water. Bring to a gentle boil, reduce heat and simmer for about 20 minutes.
  • Mix sugar, rice vinegar, and vanilla extract in a small bowl. Pour over cooked rice and fold until well combined. Cool to room temperature.
  • Slice strawberries evenly.
  • Place a sushi mat on a clean surface and lay parchment paper on top. Wet your hands and spread rice evenly over the parchment, leaving space at the top.
