2 lbs of beef chuck, cut into 1-inch cubes
2 tablespoons of olive oil
1 large onion, chopped
3 large carrots, sliced
4 medium potatoes, diced
3 cloves of garlic, minced
4 cups of beef broth
2 tablespoons of tomato paste
2 bay leaves
Salt to taste

Instructions
Begin by gathering all your ingredients. Ensure your beef is cut into uniform cubes for even cooking. Chop the onion, slice the carrots, and dice the potatoes.
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef in batches, ensuring not to overcrowd the pan. Brown all sides of the beef cubes for about 5 minutes.
Once your beef is browned, remove it from the pot and set it aside. In the same pot, add the chopped onion and sauté for about 2 minutes until translucent. Then, add the garlic and cook for an additional minute until fragrant.
Return the beef to the pot and add in the carrots, potatoes, beef broth, tomato paste, and bay leaves. Stir everything together to combine the flavors. Season with salt and pepper according to your taste preferences. Bring the mixture to a boil.
Once the stew reaches a boil, lower the heat to a gentle simmer. Cover the pot and let it cook for about 60 minutes.
After simmering, taste your stew and adjust seasoning if necessary. Remove the bay leaves before serving.
