2 lbs of beef chuck roast, cut into 1-inch pieces
2 tablespoons of vegetable oil
2 medium onions, chopped
4 cloves of garlic, minced
4 medium carrots, sliced
3 medium potatoes, diced
4 cups of beef broth
1 cup of red wine
2 bay leaves
Salt to taste
Pepper to taste
Instructions
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Sear the beef chunks in batches, 3-4 minutes per side. Transfer to a plate.
