  • 1 cup green beans, trimmed and blanched
  • 45 small potatoes, boiled and quartered
  • 4 large eggs, hard-boiled and sliced
  • 1 can of tuna (57 ounces), preferably packed in olive oil
  • ¼ cup black olives (Kalamata or Niçoise)
  • 23 tablespoons olive oil
  • 23 tablespoons lemon juice
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish

  • Instructions

  • Prep the vegetables: Wash all fresh produce. Slice the tomatoes, cucumber, and red onion. Blanch green beans for 5 minutes and run under cold water.
  • Cook the potatoes: Boil potatoes in salted water until tender, about 15-20 minutes. Drain and cool, then cut into quarters.
  • Hard-boil the eggs: Place eggs in cold water in a separate pot. Bring to boil, turn off heat, cover for 10-12 minutes, then place in an ice bath.
  • Make the dressing: Whisk together olive oil, lemon juice, salt, pepper, and minced garlic if desired.
  • Assemble your masterpiece: On a platter, create a bed of mixed greens. Artfully arrange cucumbers, tomatoes, onion, green beans, potatoes, and sliced eggs, placing tuna and olives in the center.
