1 cup of pumpkin puree
¾ cup of brown sugar
2 large eggs
½ cup of heavy cream
2 tsp of pumpkin pie spice
1 tsp of vanilla extract
1 (9-inch) pre-made pie crust
1 egg (for wash, optional)
Preheat the oven to 350°F (175°C). Roll out the pre-made pie crust on a lightly floured surface and cut it into small circles.
In a mixing bowl, combine the pumpkin puree, brown sugar, eggs, heavy cream, pumpkin pie spice, and vanilla extract. Whisk until smooth.
Place a tablespoon of the pumpkin filling in the center of each pie crust circle and fold the edges over the filling, sealing tightly.
Place the assembled bombs on a baking sheet lined with parchment paper, brush with egg wash if desired, and bake for 25-30 minutes until golden brown.
Allow to cool for 10 minutes before serving.
