  • 1 1/2 cups of crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container of whipped topping
  • 1 (3.4 oz) package instant coconut pudding mix
  • 2 cups cold milk
  • 1 cup shredded sweetened coconut
  • 1 cup whipped topping (for topping)
  • 1/4 cup toasted shredded coconut (for garnish)

  • Instructions

  • In a medium bowl, mix the crushed graham crackers, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9×13-inch baking dish.
  • Bake the crust in a preheated oven at 350°F (175°C) for about 8-10 minutes. Allow it to cool completely.
  • In a large bowl, beat the softened cream cheese with a handheld mixer until smooth. Gradually add the powdered sugar, mixing until incorporated. Fold in the whipped topping until creamy, then spread evenly over the cooled crust.
  • In a separate bowl, whisk together the coconut pudding mix and cold milk until thickened. Stir in the shredded coconut. Spread the pudding mixture over the cream cheese layer.
  • Spread the remaining whipped topping over the pudding layer. Chill the dessert for at least 4 hours, or overnight.
  • Sprinkle the toasted coconut on top just before serving. Slice and enjoy!
