1 1/2 cups of crushed graham crackers
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 (8 oz) container of whipped topping
1 (3.4 oz) package instant coconut pudding mix
2 cups cold milk
1 cup shredded sweetened coconut
1 cup whipped topping (for topping)
1/4 cup toasted shredded coconut (for garnish)
Instructions
In a medium bowl, mix the crushed graham crackers, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9×13-inch baking dish.
Bake the crust in a preheated oven at 350°F (175°C) for about 8-10 minutes. Allow it to cool completely.
In a large bowl, beat the softened cream cheese with a handheld mixer until smooth. Gradually add the powdered sugar, mixing until incorporated. Fold in the whipped topping until creamy, then spread evenly over the cooled crust.
In a separate bowl, whisk together the coconut pudding mix and cold milk until thickened. Stir in the shredded coconut. Spread the pudding mixture over the cream cheese layer.
Spread the remaining whipped topping over the pudding layer. Chill the dessert for at least 4 hours, or overnight.
Sprinkle the toasted coconut on top just before serving. Slice and enjoy!
