2 large chicken breasts (boneless, skinless)
1 cup long-grain white rice
1 small onion, chopped
2 stalks of celery, diced
2 medium carrots, sliced
3 cloves of garlic, minced
6 cups low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
1 cup frozen peas (add in 30 minutes before serving)
2 tablespoons fresh parsley, chopped (for garnish)
Optional: lemon wedges for serving
Prep the veggies: Take your onion, celery, and carrots, and chop them into bite-sized pieces.
Add to the slow cooker: Toss the chicken breasts, chopped veggies, rice, and garlic into the slow cooker.
Season: Sprinkle in the dried thyme, rosemary, salt, and pepper.
Pour in the broth: Carefully add the chicken broth over all the goodness in the slow cooker.
Set it and forget it: Cover the slow cooker and let it cook on low for 6-8 hours or on high for 3-4 hours.
Shred the chicken: When it’s done, remove the chicken breasts and shred them with two forks.
