2 cans (15 oz each) of white beans, rinsed and drained
1 cup of diced tomatoes
2 cups of kale or spinach, roughly chopped

Grated Parmesan cheese (optional)

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the onions are translucent and the veggies are starting to soften.
