8 oz of Brie cheese
4 oz of diced Pancetta
1 cup of Fresh cranberries
1 tbsp of Fresh thyme, chopped
1 sheet of Puff pastry
2 tbsp of Honey
1 Egg (for egg wash)
Salt to taste
Pepper to taste
Preheat your oven to 400°F (200°C).
In a skillet over medium heat, cook the diced pancetta until crispy—about 6-8 minutes.
Lightly flour your workspace and roll out the puff pastry to fit your tart pan.
In a bowl, mix the fresh cranberries with honey, salt, and black pepper.
Spread a layer of the cooked pancetta, followed by the cranberries and then slices of Brie cheese.
Sprinkle the fresh thyme over the top.
Beat the egg and brush onto the pastry edges.
Bake the tart for 25–30 minutes until golden brown.
