2 cups of cooked chicken, shredded
4 cups of chicken broth
1 cup of corn, frozen or canned
1 can (15 oz) of black beans, drained and rinsed
1 can (14.5 oz) of diced tomatoes with green chilies
2 tablespoons of taco seasoning
8 oz of cream cheese
1 cup of shredded cheese (Mexican blend)
¼ cup of cilantro, chopped (for garnish)
Juice of 1 lime
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.
Add the shredded chicken, corn, black beans, and diced tomatoes with their juice into the pot. Stir to combine all ingredients well.
Pour in your chicken broth and add the taco seasoning. Bring the mixture to a simmer, allowing the flavors to meld together for about 10 minutes.
