2 cups of cooked chicken, shredded or diced (about 2 medium chicken breasts)
1/2 cup of celery, finely chopped
1/4 cup of red onion, finely chopped
1/2 cup of grapes, halved (or add apples for a crunch!)
1/4 cup of mayonnaise (or Greek yogurt for a lighter touch)
1 tablespoon of Dijon mustard
1 tablespoon of fresh lemon juice
Salt and pepper, to taste
1/4 cup of slivered almonds or walnuts (optional)
Fresh herbs like dill or parsley, for garnish
