2 cups of shredded cooked chicken
1 can (10.5 oz) of cream of chicken soup
1 can (10.5 oz) of cream of mushroom soup
1 cup of sour cream
1 cup of diced tomatoes with green chilies
1 cup of shredded cheddar cheese
1/2 cup of milk
1 teaspoon of chili powder
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
9–10 corn tortillas, cut into triangles
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, milk, diced tomatoes with green chilies, chili powder, garlic powder, and onion powder.
Stir in the shredded chicken and half of the shredded cheddar cheese into the creamy mixture.
Spread a little bit of the creamy mixture at the bottom of the prepared baking dish. Layer in a third of the corn tortillas, followed by half of the remaining creamy chicken mixture.
Repeat the layering process – another third of the tortillas, the remaining creamy chicken mixture, and then top with the last third of the tortillas.
Pour any remaining creamy mixture on top and sprinkle the rest of the cheddar cheese over everything. Cover with aluminum foil.
Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
Allow the casserole to cool for about 10 minutes before serving. Garnish with fresh cilantro.
