2 tablespoons of olive oil
1 medium onion, diced
3 cloves of garlic, minced
8 ounces of sliced mushrooms (any variety)
4 cups of vegetable broth
1 cup of heavy cream
1 teaspoon of dried thyme
Salt to taste
Pepper to taste
Fresh parsley for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes until it’s translucent. Add the minced garlic and stir frequently for an additional minute.
Add the sliced mushrooms to the pot. Cook for about 5-7 minutes until they soften and begin to release their juices. Stir occasionally for even cooking.
Once the mushrooms have cooked down, pour in the vegetable broth. Add the dried thyme, salt, and pepper to taste. Allow this mixture to simmer for 15 minutes.
After simmering, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a traditional blender and return the soup to the pot after blending.
Stir in the heavy cream and let the soup heat through for about 2-3 minutes. Adjust seasoning if necessary.
Ladle the hot soup into bowls and garnish with freshly chopped parsley for a pop of color and freshness.
