Ingredients

  • 8 oz of pasta (fettuccine or penne)
  • 1 cup of roasted red peppers, finely chopped
  • 1 cup (240 ml) of heavy cream
  • 8 oz of burrata cheese
  • 1/4 cup of fresh basil, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

  • Instructions

  • In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente, about 8 to 10 minutes. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the roasted red peppers and heavy cream to the skillet. Reduce heat to low and blend until smooth and creamy.
  • Add the cooked pasta and 1/4 cup of reserved pasta water to the skillet. Stir until fully coated. Add more pasta water if necessary.
  • Gently tear the burrata and add it to the pasta along with chopped basil. Season with salt and pepper. Toss gently.
  • Plate the pasta and garnish with additional black pepper and basil if desired. Serve warm.
