Ingredients

8 oz of pasta (fettuccine or penne)
1 cup of roasted red peppers, finely chopped
1 cup (240 ml) of heavy cream
8 oz of burrata cheese
1/4 cup of fresh basil, chopped
3 cloves of garlic, minced
2 tablespoons of olive oil
Salt and pepper to taste
Instructions
In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente, about 8 to 10 minutes. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the roasted red peppers and heavy cream to the skillet. Reduce heat to low and blend until smooth and creamy.
Add the cooked pasta and 1/4 cup of reserved pasta water to the skillet. Stir until fully coated. Add more pasta water if necessary.
Gently tear the burrata and add it to the pasta along with chopped basil. Season with salt and pepper. Toss gently.
Plate the pasta and garnish with additional black pepper and basil if desired. Serve warm.
