  • 2 tbsp of olive oil
  • 3 minced garlic cloves
  • 1 cup (240 ml) of heavy cream
  • ½ cup (50 g) of grated Parmesan cheese
  • 8 oz (225 g) of burrata cheese
  • ½ cup chopped fresh basil leaves
  • Salt and pepper to taste

  • Instructions

  • Begin by preheating your oven to 450°F (230°C). Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a lined baking sheet. Drizzle a tablespoon of olive oil over the peppers and roast them for about 20 minutes, or until the skins are charred.
  • Once the peppers have cooled, carefully peel off the skins and add them to a blender. Pour in the heavy cream, minced garlic, salt, and pepper. Blend until the mixture is smooth and creamy.
  • While the sauce is blending, boil salted water in a large pot. Add the pasta and cook according to the package instructions until al dente. Reserve about ½ cup of pasta water before draining the pasta.
  • In a large mixing bowl, combine the cooked pasta with the creamy red pepper sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
  • Plate the creamy pasta and top each serving with a generous piece of burrata. Finish with an additional sprinkle of parmesan and fresh herbs before serving.
