12 oz (340 g) of pasta (spaghetti or fettuccine)
2 large red bell peppers
2 tbsp of olive oil
3 minced garlic cloves
1 cup (240 ml) of heavy cream
½ cup (50 g) of grated Parmesan cheese
8 oz (225 g) of burrata cheese
½ cup chopped fresh basil leaves
Salt and pepper to taste
Instructions
Begin by preheating your oven to 450°F (230°C). Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a lined baking sheet. Drizzle a tablespoon of olive oil over the peppers and roast them for about 20 minutes, or until the skins are charred.
Once the peppers have cooled, carefully peel off the skins and add them to a blender. Pour in the heavy cream, minced garlic, salt, and pepper. Blend until the mixture is smooth and creamy.
While the sauce is blending, boil salted water in a large pot. Add the pasta and cook according to the package instructions until al dente. Reserve about ½ cup of pasta water before draining the pasta.
In a large mixing bowl, combine the cooked pasta with the creamy red pepper sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
Plate the creamy pasta and top each serving with a generous piece of burrata. Finish with an additional sprinkle of parmesan and fresh herbs before serving.
