1 cup of asparagus, trimmed and cut into bite-sized pieces
1 cup of peas (fresh or frozen)
1 cup of cherry tomatoes, halved
1 cup of heavy cream (or a non-dairy alternative)
1/2 cup of grated Parmesan cheese (plus more for serving)
1/4 cup of fresh mint leaves, chopped
Salt and pepper, to taste
Red pepper flakes (optional)
Instructions
Start by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
Stir in minced garlic and cook for an additional minute.
Toss in asparagus and cook for about 3 minutes until it starts to soften. Then, add peas and halved cherry tomatoes, cooking for another 2-3 minutes.
Reduce heat to low and pour in heavy cream, stirring to combine.
Sprinkle in grated Parmesan cheese and stir until melted. If too thick, add reserved pasta water.
Mix in cooked penne pasta until every piece is coated. Add chopped mint and gently combine.
Plate up and garnish with extra Parmesan and fresh mint leaves.
