  • 1/4 cup of fresh mint leaves, chopped
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

  • Instructions

  • Start by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Toss in asparagus and cook for about 3 minutes until it starts to soften. Then, add peas and halved cherry tomatoes, cooking for another 2-3 minutes.
