  • 2 tablespoons of olive oil
  • 1 lb of Italian sausage
  • 4 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes, with juices
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 1 ½ cups of fresh spinach
  • 1 cup of grated Parmesan cheese
  • 1 cup of shredded mozzarella cheese
  • Fresh basil for garnish

  • Instructions

  • Preheat your oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks, about 5-7 minutes.
  • Add the minced garlic and cook for an additional minute, stirring constantly.
  • Pour in the diced tomatoes, heavy cream, and chicken broth. Then add the dried oregano, dried basil, salt, and pepper. Stir and let simmer for about 5 minutes until slightly thickened.
  • Add the fresh spinach and stir until wilted. Then add the grated Parmesan cheese and mix until melted.
