4 boneless, skinless chicken breasts
1 cup breadcrumbs (Panko)
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
1 cup heavy cream
4 cloves fresh garlic, minced
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Place the chicken breasts between two pieces of plastic wrap and pound gently with a meat mallet until even thickness.
In one bowl, whisk the eggs with a pinch of salt and pepper. In another bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, and more salt and pepper.
Dip each chicken breast in the egg mixture, letting excess drip off, then press into the breadcrumb mixture to coat well.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook 4-5 minutes on each side until golden brown.
Transfer the skillet to the oven and bake for 10-15 minutes until cooked through, with a meat thermometer reading 165°F (74°C).
In a separate saucepan, melt butter over medium heat, add minced garlic, and sauté for about a minute. Pour in heavy cream, stir, and let thicken for 5 minutes.
Season the sauce with salt and pepper, then stir in chopped parsley.
Plate the chicken, drizzle with creamy garlic sauce, and garnish with parsley.
