3–4 lbs Beef Chuck Roast
3 cups Beef Broth
1 large Onion, chopped
4 Carrots, peeled and cut into chunks
4 Potatoes, quartered
4 cloves Garlic, minced
1 teaspoon dried Thyme
1 teaspoon dried Rosemary
1 teaspoon Salt
1/2 teaspoon Pepper
Instructions
Gather all your ingredients: chop the onion, peel and chunk the carrots, and quarter the potatoes.
Optional: Sear the beef chuck roast in a hot skillet for about 3-4 minutes on each side.
Place the chopped onions at the bottom of the Crockpot, followed by the seared roast and arrange carrots and potatoes around the meat.
Add the minced garlic, thyme, rosemary, salt, and pepper on top of everything.
Slowly pour the beef broth over the meat and vegetables.
Cover the Crockpot and set it to low for 6-8 hours or high for 4-5 hours.
About half an hour before serving, check the tenderness of the meat with a fork; if it’s falling apart easily, it's done. If not, continue cooking and check every 15 minutes.
Serve warm with your favorite sides.
