  • 34 lbs Beef Chuck Roast
  • 3 cups Beef Broth
  • 1 large Onion, chopped
  • 4 Carrots, peeled and cut into chunks
  • 4 Potatoes, quartered
  • 4 cloves Garlic, minced
  • 1 teaspoon dried Thyme
  • 1 teaspoon dried Rosemary
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

  • Instructions

  • Gather all your ingredients: chop the onion, peel and chunk the carrots, and quarter the potatoes.
  • Optional: Sear the beef chuck roast in a hot skillet for about 3-4 minutes on each side.
  • Place the chopped onions at the bottom of the Crockpot, followed by the seared roast and arrange carrots and potatoes around the meat.
  • Add the minced garlic, thyme, rosemary, salt, and pepper on top of everything.
  • Slowly pour the beef broth over the meat and vegetables.
  • Cover the Crockpot and set it to low for 6-8 hours or high for 4-5 hours.
  • About half an hour before serving, check the tenderness of the meat with a fork; if it’s falling apart easily, it's done. If not, continue cooking and check every 15 minutes.
  • Serve warm with your favorite sides.
