  • ¼ cup of granulated sugar
  • ½ teaspoon of sea salt
  • 5 tablespoons of unsalted butter, melted
  • 1 large egg white
  • 1 cup of dark chocolate chips
  • ½ cup of heavy cream
  • 1 tablespoon of unsweetened cocoa powder
  • 1 teaspoon of vanilla extract
  • Pinch of sea salt
  • 1 cup of fresh or frozen dark cherries
  • 2 tablespoons of honey or maple syrup
  • 1 tablespoon of lemon juice

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the almond flour, granulated sugar, and sea salt. Add the melted butter and egg white, and mix until fully combined.
  • Lightly grease a tart pan with butter. Press the crust mixture into the base and up the sides evenly. Prick the bottom with a fork to prevent bubbling. Bake for about 10-12 minutes until lightly golden.
  • While the crust is baking, place the dark chocolate chips in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer; pour it over the chocolate. Let it sit for a couple of minutes, then stir until smooth. Add in cocoa powder, vanilla extract, and a pinch of salt, mixing until fully combined.
  • Once the crust is cooled for a few minutes, pour the chocolate filling into it, spreading evenly.
  • In another bowl, combine the cherries with honey or maple syrup and lemon juice. Spoon over the chocolate filling, distributing the cherries evenly.
  • Return the tart to the oven and bake for an additional 15-20 minutes until set but still a little wobbly in the center.
  • Allow it to cool completely before slicing. Serve dusted with powdered sugar or topped with whipped cream.
