  • 150 grams of all-purpose flour
  • 1 teaspoon of baking powder
  • 2 large eggs, beaten
  • 1 teaspoon of vanilla extract
  • 200 milliliters of heavy cream
  • 150 grams of dark brown sugar (for sauce)
  • 50 grams of butter (for sauce)

  • Instructions

  • Place the chopped Medjool dates in a bowl and pour boiling water over them. Let soak for about 10 minutes.
  • Blend the soaked dates until smooth and set aside to cool slightly.
  • Cream the butter and brown sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well before adding the next. Stir in the vanilla extract.
  • Fold in the pureed date mixture, followed by the sifted flour and baking powder, being careful not to overmix.
  • Pour the batter into a greased baking dish and bake in a preheated oven at 180°C (350°F) for 40 minutes or until a skewer inserted comes out clean.
