200 grams of Medjool dates, pitted and chopped
250 milliliters of boiling water
100 grams of unsalted butter, softened
150 grams of brown sugar
150 grams of all-purpose flour
1 teaspoon of baking powder
2 large eggs, beaten
1 teaspoon of vanilla extract
200 milliliters of heavy cream
150 grams of dark brown sugar (for sauce)
50 grams of butter (for sauce)
Place the chopped Medjool dates in a bowl and pour boiling water over them. Let soak for about 10 minutes.
Blend the soaked dates until smooth and set aside to cool slightly.
Cream the butter and brown sugar together until light and fluffy.
Add the eggs one at a time, mixing well before adding the next. Stir in the vanilla extract.
Fold in the pureed date mixture, followed by the sifted flour and baking powder, being careful not to overmix.
Pour the batter into a greased baking dish and bake in a preheated oven at 180°C (350°F) for 40 minutes or until a skewer inserted comes out clean.
