1 block (14-16 oz) extra-firm tofu
1/2 cup brown sugar (packed)
1/4 cup soy sauce or tamari for gluten-free
1/4 cup maple syrup
1 teaspoon smoked paprika
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon cloves (optional)
1 tablespoon Dijon mustard
Pecan or walnut halves for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C). Drain the tofu and gently press it between paper towels to remove excess water. Slice the tofu lengthwise into thick pieces, about 1-inch thick.
In a mixing bowl, whisk together the brown sugar, soy sauce, maple syrup, smoked paprika, ginger, cinnamon, cloves, and Dijon mustard until smooth.
In a baking dish, arrange the tofu slices in a single layer. Pour half of the glaze over the tofu, making sure each piece is well coated. Reserve the other half of the glaze for later.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and drizzle the remaining glaze over the tofu. Bake for an additional 15 minutes.
Once you pull it out of the oven, let it sit for 5 minutes before slicing. Garnish with pecans or walnuts.
